The Natural Bean Journey
Ripe cherries are picked and laid straight onto raised beds to dry whole in the sun, turned by hand so they dry evenly. Nothing is pulped and nothing is washed off, so the fruit does its work on the bean as it dries. It is the oldest way of making coffee, and in Yirgacheffe it is still the way the best lots are made.
This is a Cafe Imports Single Farmer Project lot — a programme built so Ethiopian growers can sell coffee traceable to their own farm rather than anonymously by the sack. Mr. Berhanu Kurse farms at Banko Gotiti, in the Gedeo district of the Yirgacheffe growing region, from heirloom Ethiopian varieties.
