The Alma Negra Bean Journey
Alma Negra — “black soul” — is the Las Lajas Micromill’s own natural process. The cherry is left whole and unpulped, so every bit of the fruit dries onto the bean instead of being washed away. Drying begins on the patio; the cherries are then gathered into piles overnight and spread back out in the sun each day, over and over, until they are dry. It is slow, hands-on work, and it is what gives a natural its depth.
The mill belongs to Oscar and Francisca Chacón, third-generation producers in the Central Valley, and it is where Costa Rica’s honey processes were first made. This lot comes off Finca La Julia and is the San Isidro Amarillo variety.
