The Natural Bean Journey
This coffee’s journey begins with carefully selected cherries, purchased by the Manos Juntas Micromill on the very day of harvest. Delivered by local producers, each lot is recorded for Brix and pH before being placed into hermetic tanks for a five-day anaerobic fermentation. During this stage, nitrogen gas is introduced to stimulate yeast activity, enhancing fruit intensity and body.
For the natural process, cherries are aged an additional five days in tanks before being transferred to solar dryers, where they spend 30–45 days drying slowly and evenly. This meticulous approach ensures a clean, consistent development of sweetness and bright fruit clarity, even within Colombia’s challenging humid climate.
By centralizing processing, Banexport and Manos Juntas allow farmers to focus on healthy crop production while the mill handles sorting, fermentation, and drying. Farmers are paid upfront at premium prices, incentivizing careful harvesting and delivering traceable, top-quality lots.
