Yili's Signature Reserve

Yili's Signature Reserve offers an un-compromised range of quality single origin filter roasted beans.

This range includes coffee beans that undergo two unique processes of processing the freshly picked beans, the Washed Process and the Natural Process:

The Washed Process, or Wet Process, involves removing the fruit from the coffee beans by either depulping (removing the skin) or demucilaging (removing both the skin and pulp) within 24 hours of harvest. Depulped coffees are fermented in tanks for 12–72 hours, while demucilaged beans are moved to drying surfaces. Fermentation continues until the beans reach about 11% moisture. Drying typically takes 18–36 hours with mechanical methods or 7–15 days on patios, raised beds, or in parabolic dryers. The resulting coffee features clean, bright flavors with caramel or sugary sweetness and a wide range of fruit acidity.


The Natural Process, or Dry Process, involves drying coffee cherries with the fruit still intact before removal. Fermentation occurs naturally within the mucilage until moisture levels drop to around 11%, making it inhospitable to microorganisms. Drying can take up to 30 days, depending on weather conditions. The resulting coffee is known for its fruity, boozy, or wine-like flavours, often with nutty or chocolate notes and a syrupy body.
